Some Differences
Generally Speaking, Commercial breeds are large birds, bred for an extra large breast size, which provides lots of white meat and a plump looking bird. Although quite flavorful, they may have a more neutral taste than some of the heritage varieties.
Heritage birds on the other hand, tend to be smaller, with a more proportional breast size, they also tend to have a larger percentage of dark meat. Heritage birds are prized for there texture, and rich succulent flavor.
What Size do I need ( no leftovers )
* 1 pound per serving if the bird is 12 pounds or less.
* 3/4 pound per serving for birds over 12 pounds.
(bigger the turkey, greater the meat to bone ratio.)
Preparation & Cooking Method
Some preparations and cooking methods can have quite an influence on the choice of bird. While enhancing many, adding strong flavors to your bird may at times overpower the unique flavors found in some of the milder flavored heritage birds.

Description :

Large, stately lords of the barnyard. Large size, lots of white meat, excellent flavor. A full grown tom can hit about 38 pounds. Hens easily go 22 pounds.

toms ---- 29-33lbs.(20 weeks)
hens ---- 18-21lbs.(20 weeks)

Giant White (Broad breasted) Turkey • $4.99lb.

Description :

The BBW turkeys are the biggest breed available. Both the BBW and the BBB turkeys are large, fast maturing, plump birds with excellent flavor.
Hens can reach 25 pounds and toms 45 pounds at maturity.

Bourbon Red Turkey • $6.50lb.

Description :

Many people feel that this turkey is one of the most beautiful of all turkey varieties. It will not grow as large or as fast as the bronze or white turkeys but is has excellent meat.

Description :

The Royal Palm displays some of the nicest colors of all turkey varieties. These birds are quite small compared to other turkeys. Mature toms weigh 15-20 pounds and hens are at 10-12 pounds.
